I’m a massive fan of tandoori cooking. I love the taste of anything that comes out of a clay oven. I think tandoori cooking is one of the best cooking methods, it’s healthier, tastier and it’s packed full of flavor that you simply don’t get with other types of cooking. One of my favourite types of tandoori cooking is chicken that’s seasoned with a host of ingredients. I like to marinade the chicken in yoghurt and add garlic, ginger and cayenne pepper amongst other ingredients and that really brings out the flavours when you are tandoori cooking in a clay oven. Sometimes, if I’m feeling a little bit adventurous I’ll add hot chili powder to the mix or chop up fresh chilies to give it a kick. I normally leave my chicken marinating overnight before I even attempt tandoori cooking. The longer you leave the chicken in the marinade the better the tandoori cooking tastes. That’s just my opinion though. At a push I’d say it’s best to marinade the chicken for at least a couple of hours before you pop it into a clay oven. Once it’s done the chicken should be a little bit crispy on the outside but nice and juicy on the inside. That’s the beauty of tandoori cooking in a clay oven. It’s the perfect method to leave your chicken nice and moist. Just make sure you don’t overcook the chicken, that’s the biggest mistake people make when they try cooking Tandoor for the first time.
It’s a good idea to keep an eye on the temperature of the clay oven when you are tandoori cooking. It’s easy to control the temperature on the oven, just open or close the ventilation door whilst the food is being cooked. Once you place skewers of chicken inside the clay oven you don’t have to day anything else, just leave tandoori cooking to do its thing. A good tip is to place half an onion on the end of your skewer. This prevents meat from falling off and stops the last piece of meat from burning on the charcoal. Cooking tandoori food is really easy and you can substitute chicken for lamb or pork and it still tastes amazing.
